Cooking Instructions

  1. Mix yeast in warm kefir.
  2. Break in eggs, stir in soft butter, add olive oil, sugar and salt.
  3. Mix everything well. Add sifted flour gradually, beating up with hands.
  4. Use all flour this way and knead dough until it comes away from your hand and elastic.
  5. If the dough is sticky, add more flour. The longer you knead, the more airy the dough will be.
  6. Now form a ball and place it into a large bowl. Cover with wet kitchen towel and put in a warm place.
  7. When the dough doubles in size (about an hour later), knead it again and let stand to rise.
  8. Once the dough rises again, start working with it.
  9. Divide the ball in half and roll out each half into 0.5-inch thick disks.
  10. Cut each disk into quarters and then cut each piece in half., yielding 8 triangles from each disk.
  11. Now mix jam with flour to prevent it from flowing outward while baking and put some jam on the edge of each triangle.
  12. Roll out and fix the edges shaping buns.
  13. Dust a baking sheet with flour and put buns on it. Let stand for 20-30 minutes.
