Sea asparagus, or celicornia, is a sea vegetable. It has a specific taste, slightly saltish and at the same time delicate. It grows in the coastal zone. Sea asparagus is widely used in Mediterranean and Japanese cuisine. You can make wonderful soups and salads with it. It can be served as a side dish for fish or other seafood. It contains iron, calcium, magnesium and potassium in perfect proportions.
Ingredients for Sea Asparagus Salad
- 1.1 lbs sea asparagus
- 1 lemon
- 4 tablespoonfuls olive oil
- Bring 4 pts of water to boil in a big pan.
- Remove the tough stems from sea asparagus stalks and put the asparagus into the boiling water. Cook it for 2-3 minutes and then drain.
- Serve it cool, dressed with lemon juice and olive oil. This salad goes perfectly well with mussels and other mollusks.
