Fried Potato Pancakes, aka Latkes, aka Potato Flapjacks, aka Draniks
This is a dish that is very popular in Byelorussia, Ukraine, America, Germany, Czech Republic and Switzerland. In Israel they call them latkes and prepare them for Hanukkah. They fry grated and pressed potato on olive oil. Draniks are also on the diet of the Pope Benedict XVI. Wherever they are made, the recipe is basically the same, although the amount of some ingredients may vary depending on traditions and personal tastes. Draniks come out soft and rounded if you grate potato finely, and they are crunchy and with uneven edges if you use a rough grate.
Ingredients for Potato Pancakes
- 3-4 large potatoes
- 1-2 egg
- 1-2 onions
- 2-3 tablespoons flour
- salt, pepper
- oil for frying
Recipe for Potato Pancakes
- Grate peeled potato and onion roughly.
- Mix with flour, eggs, salt and pepper. Let the dough stand by for about 10 minutes.
- Fry draniks on well-heated oil, putting the dough on with a spoon.
- Fry on medium heat for about 3 minutes on each side until nicely brown. Serve with sour cream.
