Khachapuri is a Georgian dish which is flat cakes with a filling of soft cheese or cottage cheese. Khachapuri exists in many variants depending on the region. Every housewife makes it in her own way. The secret of tasty khachapuri is that there should be a lot of filling.

Ingredients for dough

  • 1 lb flour
  • 0.42 pt kefir (sour milk)
  • 0.2 lb sour cream
  • one egg
  • 1 teaspoon salt
  • 0.5 teaspoon soda
  • 3 tablespoons vegetable oil

  • 1 lb sheep feta cheese
  • 0.6 lb cottage cheese

The Recipe for Khachapuri

  1. Sift flour, mix with salt and soda. Add kefir, sour cream, oil and an egg. Knead soft non-sticky dough. Wrap it up in a film and put away into the fridge for 2 hours.
  2. Make the filling by mixing cottage cheese with grated feta cheese and an egg.
  3. Separate the dough into four. Roll out finely.
  4. Put some filling onto each cake and pinch the edges together, picking up the dough in a circle from the edge to the center. Turn the cake seam down and roll out a little.
  5. Fry khachapuri on both sides until nicely brown, for about 3-4 minutes, on a dry frying pan on medium heat.
