The Recipe for Crescent Rolls with Plum Jam and Nuts
Treat your nearest and dearest (and yourself!) to nice crescent rolls for tea. We have been baking them for years and are invariably pleased with the result. At times we replace sour cream with thick yoghurt– Greek yogurt, 10% fat, the rolls don’t get no worse for the alteration. The dough is always soft because it is rubbed together with cold butter into small crumbs.
If you make the filling to our guidelines, it will never soak up and leak during baking.
Ingredients for dough
- 1 lb flour
- 0.3 lb butter
- 0.3 lb sour cream
- 2 tablespoons starch
- 2 egg yolks
Ingredients for filling
- 1 cup plum jam
- 1 cup nuts
- 0.2 lb sugar
- 2 egg whites
- 2 tablespoons starch
Recipe for Crescent Rolls
- Mix flour with starch, salt and sugar; add cubes of cold butter and rub the mixture into small crumbs.
- Rub yolks into the mixture – either manually or in the blender.
- Add sour cream and knead soft non-sticky dough. Wrap it up in a film and put away into the refrigerator for 2 hours.
- Make the filling – grind nuts finely, mix them with egg whites, sugar, starch and jam.
- Separate the dough into 5-6 parts. Roll out each of them finely and separate into 8 triangles. Put 1 teaspoon of the filling on the base of each and roll up into a crescent roll.
- Place the rolls on a baking tray overlaid with parchment.
- Bake in the oven pre-heated to 356 degrees for 20-25 minutes.
