The Zucchini with Ricotta and Truffles Recipe
You can make remarkable dishes that will be fine for any occasion with zucchini. Take, for example, zucchini with tender Ricotta whey cheese and black truffles – you will be surprised at how good it tastes. Of course, fresh truffles are costly, and you have to wait until they are in, but you can always fall back on truffle paste that is prepared from raw truffles grated with olive oil.
Ingredients for Zucchini with Ricotta
- 3 zucchini
- 0.5 lb ricotta
- 0.1 lb truffle paste
- 0.06 lb pine nuts
- 2 garlic cloves
- 2 tablespoons olive oil
Recipe for Zucchini with Ricotta and truffles
- Cut zucchini along into thin strips. Fry them on a dry non-sticky frying pan until they are soft.
- Mix ricotta with truffle paste, olive oil and mashed garlic. Salt to taste.
- Fold up zucchini stripes into rolls, put the stuffing in and sprinkle with nuts.
