- Milk: 1 cup.
- Sugar: 1 cup.
- Egg yolks: 5.
- Lemon zest: 2-3 tbsp
- Lemon juice 100 ml.
- 35% cream 2 cups.
Recipe for Lemon Ice Cream
- Heat the milk with sugar in a small saucepan.
- Whisk a small amount of hot milk with egg yolks. Put everything back into the pan, whisking constantly.
- Add lemon zest. Cook stirring constantly at low heat until the mixture covers the back of a spoon in a thick layer.
- Remove the cream from the heat, let it cool.
- Add lemon juice. And quickly put the pan with the cream in a bowl with ice water, and stir for 2 minutes.
- Add cold whipped cream, stir.
