How to Cook Gnocchetti with Shrimp
In this recipe we use very little potato dumplings. They are called Gnocchetti in Italy, unlike bigger dumplings that are known as Gnocchi. Shrimp, zucchini and Gnoccetti with a delicate shallots flavor go perfectly well in this dish. Saffron, chili pepper and wine give an amazing note to this dish emphasizing its unique taste. It is a great idea for romantic dinner as many of the ingredients are good aphrodisiacs.
Ingredients for Gnocchetti with Shrimp
- 1.1 lb (500 g) Gnocchetti
- 1 lb (400 g) large shrimp (without heads)
- 3 medium zucchini
- 10 small tomatoes (or 3-4 medium)
- 1 onion
- 3 garlic cloves
- 1-2 shallots
- Saffron
- 3-4 tablespoons extra virgin olive oil
- 1 cup dry white wine
- 1-2 chili peppers
- 3-4 parsley stalks
- Salt to taste
Recipe for Gnocchetti with Shrimp
- Peel garlic cloves and cut in half. Shred shallots.
- Finely chop chili peppers without removing the seeds.
- Cut onion into thin half-slices.
- Finely dice tomatoes.
- Boil shrimp. As soon as the water starts boiling, take the shrimp out, peel and cut into 3-4 pieces.
- Wash zucchini and remove seeds. Cut into thin slices.
- Shred parsley.
- Pour olive oil in a large frying pan and sauté garlic with shallots until golden.
- Then add tomatoes and parsley and simmer for ten minutes.
- Then pour in wine and keep simmering until wine starts evaporating.
- Now add zucchini slices and shrimp water, if needed.
- Five minutes later, put shrimp and chopped chili pepper and some water.
- Simmer for additional 6-8 minutes and then remove garlic cloves and add saffron.
- Mix everything well, cover and turn the heat off.
- Now fill a pot with water, add salt and bring to a boil.
- Drop Gnocchetti into boiling water. Make Gnoccetti using this Gnocchi recipe. Just make sure you cut them into smaller pieces.
- Once the Gnocchetti float up, remove them from water with a slotted spoon and put into the sauce with shrimp.
- Toss to let Gnocchetti soak in the sauce.
- Arrange on serving plate and garnish with whole shrimp, thin zucchini slices and parsley.
