The Recipe for Cock Soup
You can make rich broths from a cock which will make good soups of various kinds. The tastiest soups are those made from homemade noodles or vermicelli made with eggs. This kind of soup is sure to warm and invigorate, improve mood. It is also wholesome as part of a children’s diet.
Ingredients for Cock Soup
- about 3 lb‘s worth cock (castrated)
- 0.5 lb vermicelli or noodles
- 2-3 onions
- a stalk of celery
- a sprig of rosemary
- a few bay
- salt
Recipe for Cock Soup
- Chop a cock into pieces, put them in a pan and pour over with 5 glasses (or 0.8 cup) of water.
- Bring to boil, cleaning away the froth with a skimmer.
- Add roughly chopped onion, celery, rosemary, laurel and salt.
- Keep boiling on a low heat for about an hour until the meat gets soft.
- After that take the meat out and filter the broth.
- Pour the filtered clear broth back into the pan, bring to boil and put in vermicelli. Boil for about 8-10 minutes.
- When serving put a few pieces of meat into each dish with the soup.
