Avocado is mainly used raw. Ripe avocado has a soft buttery pulp that can be easily mashed into puree. Avocado’s taste being neutral, lemon juice brings in a certain sharpness and richness. Besides, lemon juice prevents avocado pulp from darkening and helps it retain its tender mouth-watering color. This sauce is called in Mexico “Guacamole” and used for different dishes.
Ingredients for Guacamole
- 1 avocado
- half a lemon
- green onion
Recipe for Guacamole
- Cut an avocado into halves, take out the stone, spoon the pulp out.
- Mash the pulp with a fork, add juice from half a lemon, salt and green onion finely diced.
- Mix it all well and serve with crackers or bread.
